INGREDIENTS

2 avocados, nice and ripe (around 300g)
2 medium sized tomatoes
½ onion, really finely diced into tiny squares
1 tbsp apple cider vinegar
1 tsp salt
2 tbsp hemp hearts
2 tbsp hemp oil plus a little extra for drizzling
1 tsp lemon juice
1 tsp chilli flakes
Lots of freshly cracked black pepper

Hemp Guacamole Bruschetta

"The nutty flavour of cold-pressed hemp oil blends perfectly with avocado and tomato in this twist on classic guacamole. Full of nourishing ingredients and absolutely delicious!"

To start, take the very finely diced onion out in a small bowl with the apple cider vinegar and salt and set aside. This takes the raw onion flavour out and infused a tart kick to the crunchy onions Chop up the avocado, add to a large bowl and smash with a fork until it is a chunky paste. Don’t overmash until it’s smooth and too liquid.

Chop the tomatoes into quarters and remove the seeds. Cut into small dice. Add to the avocado in the bowl.

Add the chopped onions along with the vinegar and salt they were soaking in.

Add all of the other ingredients and stir to combine.

Taste and adjust salt, pepper, chilli and lemon to your taste
